Happy Thanksgiving. I hope you enjoyed yours. I did. I'm in my new place and I had my family here this weekend helping me cook up a feast.
I love Thanksgiving. It is the one meal in the year where people actually eat lots of vegetables. You could hardly even find the turkey on my plate because it was overwhelmed with plant food.
What does a nutritionist eat for Thanksgiving? LOTS.
I got a turkey roll/roast from The Village Butcher in Oak Bay that I basted with vegetable stock and orange juice. I made a cranberry glaze for the turkey that I used for the last baste (cranberry sauce, orange juice, rosemary, Dijon, Worcestershire, and garlic). A little red wine, vegetable stock and flour made the pan juices into a great gravy. There was also rice and apple stuffing (olive oil, apples, onion, sage, garlic, nutmeg, allspice, paprika, orange juice, wild rice, and bacon).
We also ate green beans and mushrooms, zucchini and tomatoes, baked sweet potatoes, and the very best Brussles sprouts ever (cooked in a skillet with garlic and olive oil and steamed with soy sauce).
Of course there was also pumpkin pie. I forgot to buy coconut milk ice cream but no one cared, we just ate it plain.
And then there were the leftovers. Yum!
